Ballybeg Greens began with an idea to utilise a space that had been unused and dilapidated for many years. Having developed the Horticulture Initiative which provides training to students through a community development project a new idea sprang from conversations with local restaurateurs.
To see if this idea was sustainable, we observed the food growth market for a 12 month period were we spotted a niche for premium quality, organically grown salad leaves, specialist vegetables, herbs and edible flowers.
Ballybeg Greens was officially formed in 2011 to and to date we have a wonderful working partnership with restaurateurs and chefs in Waterford City & County.
Here at Ballybeg Greens you can purchase a variety of top quality, organically grown salad leaves, such Mizuna, Pak Choi, Rocket and Lettuce.
In addition we have specialist vegetables for the most exquisite dishes, these range from Cauliflower in purple, yellow & green, mixed color Carrots and Radishes.
We supply organically grown produce to many restaurants in Waterford City and County.
The reason Ballybeg Greens works so well is the main aim of the operation is run by General Operatives that have been successful in gaining a place through the Community Employment Scheme.
The next area that brings the garden growth and new ideas is the people who have trained in horticulture through the Ballybeg Horticulture Initiative, these students once competed their studies have taken the initiative to set up their own allotment.
The last part of Ballybeg Greens is the community aspect of the 30+ allotments that have been allocated to previous students and CE scheme participants along with the community of Ballybeg.
Together we developed a sustainable business in Ballybeg, for the community of Ballybeg and further environs.
