I decided to call the company Ceile because I loved how neighbours would come together and work as a team in harvest times gone by. So I love sourcing from local business who are passionate about traditional and ethical respectful teamwork that supports regenerative typess of agriculture. I love even if ingredients are sourced from far away, that they have been supportive in generational transfer skills on the ways of life. Sourcing these ingredients is a great way to support culture at home and abroad.
How We Create Our Product
I research all the ingredients that I use, which are Solaris Loose leaf tea Galway (who visits the plantations) Native organic unrefined sugar which is a fair trade product of Brazil, Well water from Western Herds Brewery and also glass bottles bought from them, local botanicals which I handpick and forage for. To reduce plastic use, I offer a discount for bottle returns.
Likewise, I take the same approach with the broth ingredient. Sourcing bones from livetsock raised holistically ad from regenerative farms
Ceile Kombucha is an irish made tonic (containing 50million good bacterias) Following traditional brewing techniques we ferment in oak barrels and are certified organic . Infusing our local hand picked Botancials and well water for a unique tastes of the Wild Atlantic Way.
Ceile broths are also prepared using well water organic vegetables and bones slowly simmering for at least 24-36hours the majority of our ingredients are sourced from local organic irish farms.
